Found this recipe that is completely paleo friendly and thought I would share
Spinach Quiche
1 Tbs olive oil
1 onion, chopped
1 slice bacon cut up
1 10oz pkg frozen spinach, thawed and drained OR 5-8 oz of fresh chopped spinach
1 1/2 cups liquid egg substitute OR 6 eggs
salt/pepper
cook onion and bacon in olive oil. In large bowl mix chopped spinach, eggs, salt/pepper, cooked onion and bacon.
Pour into a 9-in pie pan sprayed with nonstick spray. Preheat oven to 350.
cook for 30 minutes at 350 - until eggs have fully set.
we have also tried this adding cooked turkey, chicken and hamburger.... mushrooms and peppers... it is a great meal. even tried grinding up some almonds with the food processer and made a crust first then poured in the egg mixture, it did take about 15-20 extra minutes to cook, but gave it a great crust and test.
Try it adding your own ingredients...it makes a complete meal!

I realized I had all of the ingredients in the kitchen, so I made this for lunch. It was delicious!! I added a bit more bacon than what the recipe called for (b/c bacon is just so yummy) and a little less onion. It only took about 15 to 20 minutes to cook (perhaps b/c I used a metal non-stick pie pan rather than a glass one). I'll certainly be making this again. Thanks Mel!
