Here's a paleo friendly recipe for y'all to try, especially if you have some of that tasty bandera ground beef.

So the thing about spaghetti and meat sauce is that the spaghetti isn't paleo.
However, with a simple replacement, you can have a great Italian dish that is
healthy, tasty and easy to cook. What's the replacement item?

I stumbled across this recipe at Newflower Market last week and wanted to share. Wish I could take credit for coming up with it, because it's absolutely delicious and filling. Tastes great reheated the next day too!  Could also be called "Caveman Stew."


Ingredients:

  • 1 cup coconut milk
  • 1-2 tablespoon curry powder
  • sea salt to taste
  • 1/2 large red onion, chopped
  • 1 medium clove garlic, chopped
  • 1/3 cup water
  • 1lb chicken tenders, diced into 1/2" chunks

Found this recipe that is completely paleo friendly and thought I would share

Spinach Quiche

1 Tbs olive oil
1 onion, chopped
1 slice bacon cut up
1 10oz pkg frozen spinach, thawed and drained  OR 5-8 oz of fresh chopped spinach
1 1/2 cups liquid egg substitute   OR 6 eggs
salt/pepper

cook onion and bacon in olive oil.  In large bowl mix chopped spinach, eggs, salt/pepper, cooked onion and bacon.
Pour into a 9-in pie pan sprayed with nonstick spray. Preheat oven to 350.

As summer approaches, there are a few things that I love to make. One of them, in fact, is Paleo/Zone, and is easy to make. There is no cooking, just chopping, blending, and straining.  It is the Spanish soup, Gazpacho. This is the traditional recipe from Andalucía that my aunt has given me. (This recipe can be altered to suit your taste.)

  • 4 large and very ripe tomatoes
