So, I finally decided to impart a paleo-dish of my own to my fellow Crossfitters. I have been struggling with the fact that I am unable to share some delicious, non-paleo recipes, but alas, I will stick with the program and only give you the "healthier" ones.

CFDC Kitchen Corner: Paleo Spinach Quiche
Found this recipe that is completely paleo friendly and thought I would share
Spinach Quiche
1 Tbs olive oil
1 onion, chopped
1 slice bacon cut up
1 10oz pkg frozen spinach, thawed and drained OR 5-8 oz of fresh chopped spinach
1 1/2 cups liquid egg substitute OR 6 eggs
salt/pepper
cook onion and bacon in olive oil. In large bowl mix chopped spinach, eggs, salt/pepper, cooked onion and bacon.
Pour into a 9-in pie pan sprayed with nonstick spray. Preheat oven to 350.

Okay, so if you haven't guessed by now; I like to cook. One of the challenges I now face in the culinary arts, is turning some of my older recipes Paleo. Meatloaf is one of those things. Everyone has a favorite meatloaf recipe and it is usually their mothers. Unfortunately, dear old mom probably used/uses a lot of salt and a lot of BREADCRUMBS! The breadcrumbs are the killer, but necessary for binding the meat together. As our coaches have reiterated time and time again, nutrition is a huge factor contributing to the efficacy of any athletic performance program, especially CrossFit. This does not mean, however, that we should go entirely without certain luxuries. With the weekend rapidly approaching, I’d like to share with you one of my new favorites, the Paleorita.
CFDC Kitchen Corner: Wade's Spicy Breaded Chicken Cutlets
Whoa, whoa, whoa!! You may be saying, "Breaded chicken cutlets?!?! How is that even possible?", "Wade are you off your meds again?" My answer to that is "Nay my gluten free friends, nay." The "breading" comes from a delicious nut I like to call, the almond.
I like to experiment a lot with food and find inspirations everywhere. This experiment turned out better than the time I tried to "fly" off the roof. This pairs well with sauteed spinach and a Riesling.
